This Valentine's Day, Perry Lane Hotel is delighted to unveil a unique dessert that marries the culinary artistry of our Executive Pastry Chef, Amber Fitzgerald, with the local flavors of Savannah Bee Company. Featured on WSAV's The Bridge with host Patty Turner, Chef Fitzgerald showcased the Chocolate Pavé with Hot Honeycomb Candy, a masterpiece crafted especially for the occasion.

Our "Date Night" menu, available on February 14th, will feature this exceptional dessert as part of a multi-course dining experience at The Emporium. The Chocolate Pavé is layered with milk chocolate mousse and piqullo honey ice cream, topped with crystallized chocolate and candied hibiscus, making each bite a delightful discovery of textures and tastes.

The highlight of this dessert is the Hot Honeycomb Candy, made using Savannah Bee Company’s renowned hot honey. This candy's unique texture—airy yet with a satisfying crunch—resembles a natural honeycomb, providing both a visual and culinary nod to our local partner's dedication to quality and innovation.
